In Montelibretti, at the gates of Rome, Annalisa Marchesi di Salvi's farm focuses on a single denomination, Sabina DOP, and controls its entire supply chain: cultivation, milling, and bottling all remain in-house. The resulting oil has a yellow-green color with golden reflections, the chromatic signature of a territory circumscribed to three municipalities in Lazio. The choice not to delegate any phase responds to a logic of consistency rather than prestige: the cultivator is the miller and the bottler, and every step remains verifiable right up to the bottle. Sabina, one of central Italy's oldest olive-growing areas, finds a linear interpretation here, where the link between plant and oil passes through no intermediaries. The farm does not open to the public, but its direct management model clearly explains how a restricted denomination can express itself with continuity, maintaining a consistent profile from one harvest to the next.
