In Formigine, on the Modena edge of the area that unites one hundred and thirty-three Emilian municipalities, Azienda Agricola Moscattini produces a single cheese: Parmigiano Reggiano DOP. The raw, unpasteurized cow's milk carries the signature of local forages to the dairy, and from there begins a process that allows no shortcuts: slow cooking of the curd, careful management of the mass, and brining. It is the aging, however, that determines everything: at least twelve months before a wheel can be called Parmigiano, often many more. Time builds the granular, flaky structure, the crystals that crunch under the tooth, and the aromatic depth that distinguishes Reggiano from any imitation. The company opens its doors all year round: visitors can follow the dairy's daily routine and taste wheels at different stages of aging, measuring firsthand how much time weighs in this craft and how the same milk tells different stories at twelve, twenty-four, or thirty-six months.
