Azienda Agricola PAOLO CAPPELLO

Limone di Siracusa IGP

On the calcareous slopes overlooking the sea of Syracuse, Paolo Cappello cultivates the Femminello, the cultivar that gives body to Limone di Siracusa IGP. The salty coastal air and generous exposure create a precise microclimate, and the denomination—extended to ten municipalities—finds in his lemon groves an example of how much the interpretation of terroir matters. Its distinctive feature is the division of the season into three harvests. The spring Primofiore, the summer Bianchetto, and the autumn Verdello are not variants but different moments of the same plant, each with its own concentration of juice and aromatic intensity. The Syracuse coast, with its light soils and marine reflection, remains the perimeter within which this rhythm makes sense. It is a production that follows the rhythm of the tree rather than forcing it, and which makes the continuity of the harvest, rather than a single peak, the measure of its quality. A single denomination, interpreted with the patience of someone who knows every bloom.
