On the hills of Stio, in the shadow of the Temples of Paestum, Azienda Agricola San Salvatore cultivates a volcanic Cilento terroir, growing both vines and olive trees. Their range of wines spans multiple areas—from the DOCs Cilento and Castel San Lorenzo to the IGTs Colli di Salerno and Paestum—featuring reds, rosés, and whites from suitable local grape varieties. Alongside, their Cilento DOP extra virgin olive oil offers the characteristic green-yellow hue and bitter-spicy finish of the region. Five denominations thus form a mosaic that brings together grape and fruit. The distinctive mark here is experimentation: Aglianico is pushed towards the Metodo Classico, to test the sparkling potential of a grape variety born for great Campanian reds. It's an open-air laboratory where Cilento's historical repertoire meets sustainable practices and still-open hypotheses.
