On the shores of Lake Como, in Bellagio, Cesare Sancassani cultivates olive groves where the Lombard light and the air descending from the Alps meet to ripen the olives. From this harvest comes an extra virgin olive oil registered under the Laghi Lombardi DOP denomination, pressed at the same estate that oversees every phase of its production. The oil's profile clearly reflects its production regulations: low acidity and a high content of phenolic substances define its character and longevity. The internal pressing shortens the journey between olive grove and mill, a detail that significantly impacts the freshness of the final product. Each bottle encapsulates the mineral essence of a glacial landscape, where the lake moderates the climate and the slopes orient the plants' exposure. It is an extra virgin oil of the lake rather than the inland hills, and its clean, low-acid, and mineral-driven character tells the story of a restricted and well-defined territory, suspended between water and mountain.
