Azienda Agricola Santori Mara oversees four DOCG denominations from the Marche region's Castelli area, a quadrilateral that brings together very different registers. There are the sparkling wines of Vernaccia Nera di Serrapetrona, the structured reds of Cònero, and two interpretations of Verdicchio — one from the cooler hills of Matelica, the other from the broad basin of the Castelli di Jesi — both in Riserva versions. A family conviction unites these four wines: character is built with time, not with shortcuts. The Riserva wines require a minimum of eighteen to twenty-four months of aging, and complexity emerges slowly.
