Sbaffi cultivates four Marche denominations that cover the region's entire chromatic spectrum: from Vernaccia Nera di Serrapetrona to the white Verdicchio wines of Matelica and Castelli di Jesi, up to the red of Cònero. It's a range that brings together sparkling wines, long-aging whites, and structured reds, each linked to a different set of regulations but governed by the same technical hand. The distinctive feature is Metodo Scacchi®, which reinterprets 17th-century oenological principles for secondary fermentation, enhancing varietal aroma with intensity and freshness. Around this signature, measurable precision is arranged: minimum aging of twenty-four months for Cònero, rigorous acidity control, and a constant pursuit of balance. For four generations, the company has been driven by a dual heritage of oenology and music, which is not just an anecdote but is felt in the method — in the way of seeking time, rhythm, and harmony within each wine.
