Azienda Agricola Simignano

Azienda Agricola Simignano is located within the area of Cinta Senese DOP, a Tuscan denomination spanning 273 municipalities and linked to a pig breed recognizable by the light band across its dark coat. Here, the denomination does not concern cheese or wine, but the meat itself. Breeding takes place in wild and semi-wild conditions: the animals move freely through the landscape, and this extensive regime leaves a direct imprint on the product. The fresh DOP-certified meats exhibit marbling and flavors derived from the pigs' natural diet and continuous movement within the territory. It's a case where quality is not built through processing but upstream, in the biology of the breed and the way it is allowed to live.
