In the Ofanto valley, in Lavello, the Di Ciommo family has been leading Azienda Agricola Zootecnica Posticchia Sabelli since 1955, continuing a dairy cattle farm that dates back over a century. Today, brothers Aldo and Marcello cultivate two hundred and fifty hectares with selected forage mixtures for feeding the cows, in a cycle that starts from the land and reaches the stable even before the dairy. From that milk comes the farm's sole denomination, Caciocavallo Silano DOP, a pasta filata cheese with a recognizable oval shape and variable aging that modulates its flavor and consistency. The entire supply chain remains under control: the same person who decides the forage composition also oversees the transformation, and this continuity explains the product's consistency better than any declaration. The knowledge accumulated through generations is not an embellishment of the story but a working tool, applied daily to the delicate transition from pasture to pasta filata. In this Lucanian valley, cheese is the culmination of a craft that begins much earlier.
