Azienda Rollo

On the slopes of the Monti Iblei, Azienda Rollo was founded in 1968 when Giovanni Rollo purchased an estate in the territory of Chiaramonte Gulfi, a land historically dedicated to fine olive oils. The turning point came with his son Giorgio, who abandoned viticulture to dedicate himself entirely to olive growing: a strategic choice that solidified the family's reputation in olive oil production. Today, operations focus on 21 hectares, between 320 and 370 meters above sea level, where temperature fluctuations sculpt the character of the fruit. This yields medium-intense extra virgin olive oils, marked by notes of green tomato, falling under the company's sole denomination, DOP Monti Iblei, which spans 39 municipalities in southeastern Sicily. In this geography of stone and olive trees, the oil is not an agricultural byproduct but the result of a deliberate specialization: the outcome of a family that, over two generations, has focused its work on a single fruit and a single territory.
