In Costigliole d'Asti, among the hills that brought Moscato its renown, Paracchino Davide's winery interprets a single denomination — Asti DOCG — in three different registers. The sparkling wine, the traditional method, and the still white all originate from aromatic white grape varieties, with Moscato bianco forming the backbone. This is a choice of concentration: a single territory, read through the nuances that its aromatic potential allows. The wines exceed 11.5% alcohol and age for at least one month, sufficient time to compose the balance between freshness and structure that marks the winery's hand. The typical luminosity of this corner of Piedmont returns in every bottle, not as a sought-after effect but as a consequence of the climate and soils. Tapet does not pursue a broad catalog: it prefers to measure itself against a single protected origin and return its three most expressive faces, from the effervescent verve of the sparkling wine to the measured calm of the still white.
