On the slopes of Monte Taburno, in Bonea, Azienda Votino works with a single denomination, Aglianico del Taburno DOCG, where Aglianico and complementary grape varieties find the specific terroir of the Benevento area. Each harvest involves careful craftsmanship, from pruning to bottling, and a minimum aging of twenty-four months, which allows the wine time to build structure and depth. The control of every phase — a recurring choice in an area that tolerates no approximations — leads to an Aglianico expressed in both red and rosé, two facets of the same regional character. The red is known for its longevity, tannic and firm, capable of evolving well beyond its initial opening; the rosé retains its backbone without the weight. Votino thus interprets one of the benchmark denominations of inland Campania with the consistency of those who focus on a single wine and follow its maturation step by step, allowing time to complete the work of the cellar.
