Baccinetti tackles one of Italy's most demanding denominations, the Brunello di Montalcino DOCG, and does so in the most radical way: a single grape variety, Sangiovese, without any concession to other grapes. This is the choice imposed by the regulations and which in Montalcino becomes almost a declaration of method, because the entire weight of the wine rests on a single variety and on the territory's ability to express it. The volcanic soils and continental climate of the hill mark each vintage, while the minimum forty-eight months of aging transform an initially austere red into a wine of classic structure and proportions. The regulations set strict parameters—alcohol content no less than 12.5%, long aging times, contained yield—leaving no room for improvisation. Baccinetti's Brunello arises from this sum of constraints and anticipation: a wine that does not seek immediate effect but longevity, consistent with Montalcino's rigorous reputation.
