Baccolo

From Rivoli Veronese, Baccolo operates within two of the most demanding white wine denominations of Verona, both DOCG. The raw material is the same—Garganega and Trebbiano di Soave, cultivated on the volcanic soils of the twelve-municipality area—but the style changes radically. Soave Superiore takes the form of a dry wine with distinct minerality and a minimum alcohol content of 12%; in Recioto di Soave, the same carefully selected and dried grapes turn sweet, in passito and spumante versions. It's a work of precision rather than breadth. Focusing attention on just two denominations allows for reading the volcanic territory from different angles: the dry tension of the Superiore on one hand, the sugary concentration of the Recioto on the other. In both cases, the hallmark remains contained intensity, the idea that the rock beneath the vineyards matters more than sheer power. Two expressions of the same landscape, rigorously kept distinct.
