Giovanni Baglieri produces Ragusano DOP, the great stretched-curd cheese of southeastern Sicily. These are massive parallelepipeds, weighing twelve to sixteen kilograms each, made from raw milk and marked by a rind that, with aging, shifts from golden yellow to straw-yellow. Few other Italian cheeses demand such a combination of physical strength and control from the cheesemaker. Production remains within the designated area of fifteen municipalities, where the link between pasture, milk composition, and flavor is not a detail but the very reason for the denomination. Baglieri also respects its geometric grammar: each parallelepiped must adhere to rigorous proportions to merit protected status, so that the shape itself becomes a guarantee of method.
