Ballabio operates from Casteggio, within the territory of Oltrepò Pavese metodo classico DOCG, a denomination that extends across forty-one municipalities in Lombardy. The winery is exclusively dedicated to bottle-fermented sparkling wines: spumante and rosé designed for complexity and long aging, built on Pinot Nero and Chardonnay with the contribution of companion Pinot varieties. The regulations mandate at least fifteen months on the lees, a period during which the wine develops depth and harmony. The continental climate defines these metodo classico wines: marked temperature excursions and minerality translate into a distinct tension on the palate. By focusing on a single denomination, but in its most demanding form, Ballabio makes bottle re-fermentation a field of specialization rather than just one line among others.
