In Charvensod, within the Fontina DOP zone that encompasses seventy-four municipalities of Valle d'Aosta, Bardhoku Leonard dedicates himself to a single product: the cheese that gives the denomination its name. It is a rigorous production perimeter, where each wheel must meet the standards set by the alpine regulations. Production begins with raw whole milk from Valdostana breed cows, a raw material that carries the imprint of high-altitude pastures. The result is a soft, elastic paste, marked by typical “eyes,” which matures towards the recognizable delicate sweetness of Fontina. This balance reflects both the terroir of the milk and the cheesemaking precision required to maintain its consistency. The dairy is not open to visitors: knowledge is conveyed through the finished product, where the choice of a single denomination and a supply chain linked to the indigenous breed translates into a cheese that clearly declares its belonging to the Valdostana mountains.
