From Piazza al Serchio, at the northern tip of Garfagnana, Mariangela Bartolomei cultivates Farro della Garfagnana IGP, a monococcum spelt protected across fifteen municipalities in the Lucca mountains. It is the oldest and most rustic of spels, recognizable by the whitish streaks on its floury endosperm—a visual signature that distinguishes the grain and almost visually certifies its origin. The cultivation of this high-altitude cereal is not a nostalgic revival but the continuation of an agronomy that has spanned centuries without interruption. On these lands, the spelt finds the conditions—climate, altitude, soils—that the 'disciplinare' (production specifications) recognizes and protects, linking the product's name to a precise and non-interchangeable area. In the contemporary act of sowing and harvesting, the farm brings together today's agricultural yield and the genetic heritage of a grain that Garfagnana has preserved for generations, returning it to the table in its most essential form.
