BAVA AZ. VITIVINICOLA S.p.A.
In Cocconato, amidst the hills connecting Monferrato and Langa, BAVA cultivates seventy hectares, where fifty vineyards coexist with patches of spontaneous woodland. The winery bears the mark of over a hundred harvests and six generations, with each parcel tended to with unwavering care. It is a company that measures time in seasons and in anticipation: the waits imposed by the regulations, and those chosen to allow the structure to mature. The four denominations tell the story of two souls of Piemonte. On one side, the great Nebbiolo — Barolo and Barbaresco DOCG — which demand long aging, thirty-eight and twenty-six months respectively, to build the tannic structure and depth required by law. On the other, the more immediate and fragrant profile of Dolcetto, in its Dogliani and Diano d'Alba versions, both DOCG, which capture the fruit and verticality of the hills. Visitors to Cocconato can step through the winery doors: tours and tastings offer direct access to this multigenerational endeavor.
