In Sant'Ambrogio di Valpolicella, nestled in the Veronese hills, Benedetti Corte Antica focuses on two of the most demanding wines in the Italian landscape, both born from the appassimento (drying) of Corvina and Rondinella grapes. The Amarone della Valpolicella DOCG requires at least 14% alcohol and twenty-four months of aging, transforming the dried grapes into a red wine of full intensity. Alongside it comes the Recioto della Valpolicella DOCG, where the same fruit takes a sweet turn, presented both as a passito (sweet wine) and in a sparkling version. The two denominations share the raw material but diverge in outcome, illustrating the two possible destinies of Valpolicella's dried grapes: dry and sweet. Everything adheres to the strict regulations of a zone encompassing nineteen municipalities. While the winery is not open for visits, its two DOCG wines remain the clearest synthesis of how a single technique—appassimento—can generate opposite yet complementary wines.
