In Castelnuovo Don Bosco, among the Asti hills, Distilleria Quaglia, under the Berto brand, offers a contemporary interpretation of Turin vermouth. The method remains that of long infusions of selected aromatic herbs, which yield amber and layered spirits with surprising olfactory depth. The approach, however, is one of reinterpretation rather than preservation: the characteristics are softened, while the complexity that defines Vermut di Torino IGP remains intact. The declared conviction is that a tradition is passed down by re-elaborating it, not by replicating it. Each expression thus arises from a calculated balance between bitter, aromatic, and sweet, where botanicals are not decoration but the architecture of the sip. It is a vermouth conceived as a living substance, capable of standing alone in a glass as well as holding its own in a cocktail. Within the scope of the Piedmontese geographical indication, Berto chooses the less nostalgic path: to honor the progenitor of vermouths not by fixing it in a formula, but by continuing to question it, infusion after infusion, as if it were still an open project.
