Paolo Berutti crafts Alta Langa DOCG sparkling wines within the Piedmontese area of 148 municipalities, where Pinot Nero and Chardonnay find the ideal altitude and climate for the metodo classico. This denomination, the winery's sole focus, is among Italy's most demanding: it requires selected grape varieties, a minimum alcohol content of 11.5%, and a long rest on the lees, here extended to a minimum of 30 months to allow the bubbles to gain finesse and sensory complexity to unfold. The offering includes both the classic and rosé versions, two interpretations of the same technical rigor that combines viticultural discipline with patient aging. It is a mountain sparkling wine rather than a lowland one, taut and vertical, where the acidity, sustained by the altitude, becomes a stylistic signature. The winery welcomes visitors for tastings: ascending these hills and sampling the different types directly in the cellar is the most tangible way to grasp what distinguishes an Alta Langa from more common sparkling wines, measuring the months spent on the lees in the glass.
