The breeding follows the ancient rhythm of pastoralism, with animals transitioning from mother's milk to pasture, yielding meats with a distinct profile. The producer covers the entire range of classifications provided by the specification—light, heavy, and castrated carcasses—so that each type corresponds to a different consumption destination, from the tenderness of a young animal to the structure of a more mature one. This work links flavor and consistency to the high-altitude pastures of inland Abruzzo, where vegetation and altitude define the meat even before slaughter.
