BINÈ

Binè operates from Novi Ligure, in the southeastern reaches of Piedmont, within the Gavi DOCG denomination. Here, the Cortese grape ripens on hills where Mediterranean and continental climates converge, about thirty kilometers from the Ligurian coast. From this single grape variety, the winery crafts three distinct interpretations: a still white, a frizzante (lightly sparkling), and a spumante (fully sparkling), each exceeding the minimum alcohol content of 10.5%. Three generations of the Ghio family have led the winery, now joined by Rosy Carlevaro, ensuring a continuity that blends agricultural heritage with modern management. Focusing entirely on one denomination, yet exploring it in three forms, speaks to an approach that favors depth over dispersion: the same Cortese grape changes texture and tension depending on the method, from the tranquil sip of the still wine to the vibrant effervescence of the bubbles.
