In San Damiano al Colle, among the hills of Oltrepò Pavese, Bisi Società Agricola focuses its work on a single denomination: Oltrepò Pavese metodo classico DOCG. From here, sparkling wines are born in classic and rosé versions, made from Pinot nero, Chardonnay, and Pinot bianco, and aged on the lees for at least fifteen months. The choice of a single set of production specifications, in a land dedicated to sparkling wine, concentrates attention on time – the slow process of secondary fermentation – rather than on quantity. The company describes itself as a guardian of a viticultural heritage received from its founders, with the intention of transmitting it intact. This idea is reflected in the wines: expressions that link the character of the soil to human effort, without forcing. Visits and tastings are open to the public and offer the most direct way to understand how, in Oltrepò, the metodo classico translates Pinot nero into finesse and persistence.
