Bixio Produttori, in San Bonifacio in the Verona area, has been cultivating vineyards since the late 1960s, passing down knowledge of the best Valpolicella zones from generation to generation. Two denominations are at the heart of their work: Amarone della Valpolicella DOCG and Recioto della Valpolicella DOCG, both from Corvina Veronese, Corvinone, and Rondinella grapes, with Amarone requiring at least twenty-four months of aging. It is the appassimento process that distinguishes the two wines born from the same grapes—the dry and powerful drive of Amarone, the restrained sweetness of Recioto—both crafted to express the character of these lands.
