Bocca di Piazza – Società Agricola

On the Sila plateau, where altitude and volcanic soil work in favor of the tuber, Bocca di Piazza cultivates Patata della Sila IGP. The agricultural company is based in Parenti, in the province of Cosenza, and operates within a protected area encompassing twenty-four Calabrian municipalities: a high-altitude perimeter that imparts a high percentage of dry matter to the product. This dryness translates into a compact flesh and a resistance to spoilage that requires no chemical preservatives: the potato holds up for months without deteriorating. It is a product designed for the cold season and for industrial frying, where firmness and consistency make all the difference. Bocca di Piazza does not open its doors to visitors, but the connection to the Sila remains evident in every harvest — in the synergy between altitude, volcano, and a tuber that makes the plateau its very identity card.
