Boccadoro

On the Calino hills in Franciacorta, Boccadoro focuses its work on a single denomination—Franciacorta DOCG—cultivating Chardonnay, Pinot nero, Pinot bianco, and Erbamat destined for sparkling and rosé wines. The recently built winery, however, embodies a longer tradition: each bottle rests for at least eighteen months, the minimum threshold for the method, and during that time, the wine acquires the finesse demanded by the regulations. The choice to concentrate on a single DOCG does not diminish ambition but rather focuses it: the Lombard terroir, the soils, and the selection of grape varieties become the sole variables to master. Here, attention to the vineyard—exposures, yields, harvest times—translates directly into the glass, without dispersion across other labels. The winery welcomes visitors: it is well worth stopping by the cellar to follow the journey from vine to disgorgement, witnessing how a handful of grapes transforms into bubbles, and understanding why those eighteen months are not a mere formality but the cornerstone of the method.
