On the hills around Marostica, Maria Bontorin cultivates cherries within the specifications of `Ciliegia di Marostica IGP`, a denomination that governs production in eight municipalities of Veneto. Her work is that of a guardian: adhering to rigorous standards that regulate every step, from planting the orchard to harvesting, without room for improvisation. The fruit bears the marks of this geographical origin. The cherries are generously sized, with a minimum diameter of twenty-three millimeters, and ripen where cool nights and measured sun exposure slowly build their sweetness and depth of color. It is a hilly microclimate that makes the difference, even before the hand of the harvester. Centered around a single denomination, the work focuses entirely on the quality of the individual fruit, without dispersion. The company is not open to visitors, but its product can be found during the short season when this Venetian cherry ripens and, by itself, tells the story of the territory that defines it.
