In the cellar, Chardonnay, Pinot nero, Pinot bianco, and Erbamat are vinified to produce wines with a minimum alcohol content of 11.5%, destined for at least eighteen months of aging. This selection of varieties covers both the classic backbone of the method and the more recent additions permitted by the regulations.
