Bordone Gian Paolo
Gian Paolo Bordone cultivates the sandy soils of Roero, where Nebbiolo takes on an unmistakable mineral precision and tannic structure. This is the sole denomination the winery dedicates itself to, a DOCG that, on the sands of the left bank of the Tanaro, expresses a more angular and nervous fruit compared to the nearby clayey slopes. His reds demand time: at least twenty months of aging for that youthful hardness to soften into complexity. The producer respects the minimum technical limit of 12.5% alcohol required by the area and stops there, allowing the terroir—not corrective intervention—to dictate the intensity. The result is a wine of measure, built on structure rather than concentration. The winery does not offer visits: its character must be sought directly in the bottle, where the sand of Roero signs each sip with its dry tension.
