Farro della Garfagnana IGP

In Piazza al Serchio, at the entrance to the Garfagnana plateau in the province of Lucca, Borghesi Almo cultivates one of the oldest cereals grown in Italy. The Farro della Garfagnana IGP is a protected emmer wheat that grows only within the fifteen municipalities of the area, a mountainous region where altitude and soil shape the grain's profile more than any industrial intervention. The producer operates within these boundaries, rooted in a landscape that has made farro an element of collective identity even before it became a product. Its distinctive mark is visual before it is gustatory: the characteristic whitish streaks running across the surface of the floury endosperm serve as a signature of authenticity, impossible to replicate outside these specific pedoclimatic conditions. Cultivating farro at the gateway to Garfagnana means accepting the times and limits imposed by the altitude, and delivering a cereal whose character—texture, resilience, flavor—arises from the encounter between land and altitude, not from forced processing. It is in this balance that the product's fidelity to its origin is measured.
