Colli Bolognesi Pignoletto DOCG

Since 1987, Bortolotti Maria has based the vineyard in Zola Predosa on radical choices: ecological conversion achieved by 1992 and immediate adherence to Giorgio Celli's 'Vino del parco' project. It is within this framework that the Colli Bolognesi Pignoletto DOCG is situated, a denomination built around Grechetto gentile and some complementary white varieties, vinified here to let the soil speak more than the cellar. The method is explicitly non-interventionist: the grapes are transformed naturally, allowing the terroir of the Colli Bolognesi to express itself without technical forcing. Animals, plants, and people coexist as a single working reality, and winemaking arises from daily contact with the earth rather than from an abstract protocol. The result is an interpretation of the Bolognese DOCG where the organic choice, made when it was still uncommon, is not a market label but the very premise of the wine: a coherent way of living on the hills for over thirty years.
