Boscolo Ivan (Coop. Villaggio)

In the Porto Tolle lagoon, where the Sacca di Scardovari breathes to the rhythm of the tides, Boscolo Ivan, through Coop. Villaggio, harvests the only denomination from this stretch of coast. The Cozza di Scardovari DOP matures in brackish waters that, with each ebb and flow, reduce the saltiness of the shell: the result is plump mollusks where sweetness prevails over the expected salinity. This is a product that carries its geography inscribed within it. The encounter between the fresh waters of the Po and the marine currents creates a balance not shared by any other Adriatic shore, and which no technique could recreate outside the Sacca. For this reason, each mussel functions as a signature of the Venetian delta, legible in its texture and flavor profile even before its label. The cooperative's work is limited to accommodating this natural cycle, entrusting the decisive part of growth to the tide and reserving for the harvest the task of capturing the right moment.
