Founded in 1972 in the hills east of Bologna, Botti dedicates fifteen certified organic hectares to a single denomination, Colli Bolognesi Pignoletto DOCG. This emblematic wine is born from Grechetto gentile cultivated between 150 and 300 meters, on clay-loamy soils that profoundly influence its freshness and longevity. Since 1996, under the guidance of Fabio Botti, the company has expanded its vineyards and cellar without losing its core focus: unwavering fidelity to the territory's character. The organic choice and traditional vine training methods serve a precise objective: to allow the inherent minerality and acidity of Pignoletto to define each vintage, without any forcing. At Botti, the denomination is not just one label among many, but the entire perimeter within which all work is concentrated, from the Bolognese hills to the glass. The result is a vertical interpretation of a single wine, traced from the vineyard's altitude to the typical expression that the Pignoletto regulations recognize and protect.
