BRESSAN LUCA

In the plain stretching around Medicina, in the province of Bologna, Luca Bressan cultivates a single denomination, but one of the most closely monitored in Italy: Patata di Bologna DOP. The recognized production area encompasses fifty-five municipalities in Emilia-Romagna, a perimeter within which each tuber must meet precise parameters of shape and size. At the heart of his work is the Primura variety, with its oval, elongated tubers and firm, yellowish-white flesh. Its regular size, between forty and seventy-five millimeters, and smooth skin make this potato versatile: suitable for both the table and industrial processing. This is not a minor detail, as it is precisely in this consistency that the value of a controlled origin crop is measured. Bressan does not sign fanciful labels: he adheres to a specification that links his field to a codified terroir, where the name printed on the packaging serves as both a guarantee and a constraint to be respected season after season.
