In Brisighella, on the hills of the Ravennate area, the estate works with Grechetto gentile alongside other permitted white grape varieties across eleven municipalities in the territory. From this foundation, a single denomination emerges: Colli Bolognesi Pignoletto DOCG, which here branches into three styles: still white, frizzante (semi-sparkling), and spumante (fully sparkling), all sharing a minimum alcohol content of 11.5%. The same attention extends to their extra virgin olive oil, which consistently earns national and international awards alongside the wines. What unites this production is less the variety of formats than the consistency of the method: each version of Pignoletto measures the grape against market demands without compromising on quality.
