From Buttrio, Buiatti Olivo navigates three DOCG denominations of Friuli-Venezia Giulia, each an expression of a different facet of the region's enological identity. Ramandolo is born from Verduzzo giallo and takes the form of a passito wine reaching 14% alcohol, concentrating ripe fruit down to the last drop of sugar. It is the most opulent wine in the range, a natural counterpoint to the minerality that characterizes the others. In Rosazzo and Colli Orientali del Friuli, the register changes: here, Friulano, Sauvignon, and Picolit focus on precision, on the mineral tension that the soil of these hills imparts. The result is a spectrum that brings together meditative sweetness and sharp dryness, without chasing fleeting trends. The choice to oversee three distinct areas speaks to a distinctly northeastern way of understanding wine, founded on the typicality of the places rather than homogenization, where each denomination retains its recognizable voice.
