In Avezzano, on the Fucino plateau, Buttari Antonio cultivates land with an unusual biography: what is now a field was once the bottom of a lake, drained and returned to agriculture. From that reclamation derive the volcanic soils which, together with the plateau's altitude, create the conditions under which Patata del Fucino IGP matures. The designation imposes precise requirements on the tuber: firm flesh, regular shape, and a skin that withstands the delicate phases of harvesting and storage without tearing. These are requirements that shift the focus from harvesting to selection, making this potato one of Italy's most recognizable. Buttari brings a deep, local knowledge of the territory, working within an agricultural environment where the fertility of the old lake and the strictness of the production specifications proceed hand in hand, without one overshadowing the other.
