On the Fucino plateau, in central Abruzzo, Gianfranco Buttari cultivates Patata del Fucino IGP where a lake once stretched. The lakebed, drained by 16th-century reclamation, is now cultivated land: from here emerge compact tubers, with a regular shape and intact skin, as recognizable as the denomination that protects them across nine municipalities. This is the uniqueness of the place—potatoes grown where water once reigned—and it remains the core of the product's identity. The plateau's altitude and the deep nature of the reclaimed soil give the flesh structure and firmness, qualities that distinguish Patata del Fucino in the Abruzzo basket of products. Buttari's production is entirely contained within this single denomination, a precise measure of an artificial landscape that has nonetheless become a calling: a valley floor reclaimed from the lake that today defines one of Central Italy's most characteristic geographically indicated potatoes, cultivated on the very bed that drainage transformed into land.
