The dairy starts with raw cow's milk and follows a centuries-old protocol: curd cooking, shaping, and then the long aging, no less than twelve months, which transforms the mass into something unrecognizable from its starting point. The result is dense, fine-textured wheels, with the crystalline fracture that is the signature of authentic Parmigiano Reggiano.
