In Valdobbiadene, where the slopes are too steep for any mechanization, Ca' dei Fiori practices a single denomination under the rules of heroic viticulture. Conegliano Valdobbiadene - Prosecco DOCG here demands manual interventions in every season: severe pruning, canopy management, cluster selection, and hand harvesting – gestures that no machine can replace on these gradients. The grapes are the indigenous varieties of the territory — Glera in the foreground, flanked by Verdiso, Bianchetta trevigiana, Perera, and Glera lunga. From this array of grape varieties, multiple interpretations of Prosecco are born: the still white wine version, frizzante, and spumante, three different degrees of effervescence from the same landscape.
