Ca' del Ponte (Rizzolio Pinuccia)
Monastero Bormida · Province of Asti · Piemonte
In Monastero Bormida, in the Langa Astigiana, Ca' del Ponte operates within the protected area of a single denomination, Robiola di Roccaverano DOP. The raw material is raw goat's milk, collected from the nineteen communities that make up this hilly district: a choice that directly links the cheese to the pastures and geography of Asti, without pasteurization filters. The resulting Robiola has no rind and a delicate paste, and allows for two interpretations. Consumed fresh, it offers the subtle and clean acidity of goat's milk; allowed to age, it gains depth and a complexity that time slowly carves out. It is a cheese that makes the terroir tangible with every taste, because the hills, grass, and climate of the Langa pass almost intact into its form. The activity is not open to visitors, and the story remains entrusted to the product: a restricted and distinctive production, where fidelity to raw milk and the area of origin counts more than any breadth of range. A case where a single denomination is enough to define a territory.
