On the hills of Barolo, Cabutto Lodovico cultivates Nebbiolo where it ripens into wines of firm structure and mineral depth. The winery produces four DOCG wines from among Piemonte's most demanding territories: Barolo with its rigorous thirty-eight months of aging, Barbaresco which requires twenty-six, and two interpretations of Dolcetto divided between Diano d'Alba and Dogliani. Two grape varieties, then, and a scale ranging from austerity to elegance. The difference between these bottles lies primarily in the vineyard, where exposure and soil composition determine the final character of each denomination. This aspect is best understood by walking among the rows: the winery welcomes visitors and demonstrates how the same village can produce both a ready-to-drink Dolcetto and a Nebbiolo that demands years of patience.
