Its two DOCG denominations originate from the same trio of indigenous grapes—Corvina, Corvinone, and Rondinella—but follow different paths. Amarone della Valpolicella requires at least twenty-four months before reaching 14 degrees; Recioto della Valpolicella, on the other hand, is presented as a passito or spumante, with a minimum of 12 degrees. Both wines begin with the appassimento of the grapes, the technique in Valpolicella that separates the dry, powerful red from its sweet version. Digitalized traceability follows every step of the supply chain, ensuring consistent recognition in national and international markets. The cooperative dimension does not detract from the precision of the result; rather, it is the scale that allows for control over selection and transformation throughout the entire process. Visitors to the winery can taste Amarone and Recioto side-by-side, discerning the difference between dry and sweet in the same room.
