In Riparbella, in the Pisan hinterland, Caiarossa's vineyards follow the biodynamic calendar: each harvest is dictated by respect for the earth's rhythms rather than market deadlines. Sangiovese, Trebbiano Toscano, and Canaiolo Nero grow in this context and converge into the Toscano IGT denomination, offered in white, red, and rosé, with alcohol levels starting from 11%. The choice of a single denomination, however broad and flexible like the Toscano IGT, allows the agricultural method to play the role of the true distinguishing mark: it is the organic and biodynamic management, more than the label, that defines the estate's identity. It's no coincidence that here, there's more talk of soil and moon than of the cellar. Visitors to the estate can observe this process firsthand, seeing how agricultural cycles become an oenological philosophy and how the terroir translates into the glass. It's an invitation to those who want to understand, even before tasting, the link between rigorous farming practices and the resulting wines.
