Caimano Claudio

In Teano, in the Caserta area, Claudio Caimano cultivates Annurca and Rossa del Sud apples within the Melannurca Campana IGP, an area encompassing five municipalities in the province. It's a restricted perimeter, and precisely this geographical concentration gives meaning to the denomination: not a generic fruit from the South, but an apple linked to a specific corner of Campania. Its character is recognizable by taste even before sight. Beneath the dark red skin, the flesh remains white, firm, and crisp, with a compactness that distinguishes the variety from any imported apple. Caimano speaks only of this fidelity: each harvest repeats the characteristics set by the disciplinary regulations, a result of the interaction between the soil and climate of the protected area. It's a work of constancy rather than spectacle, where the value lies not in a single brilliant vintage but in the ability to consistently deliver, harvest after harvest, the same identity of a territory that has chosen to sign its apples.
