In Cutro, in the Crotone area, Calabrialleva brings together sheep breeders in a cooperative from one of Calabria's oldest cheesemaking regions. This association of Calabrian breeders pools flocks and milk to produce Pecorino Crotonese DOP across a territory encompassing 52 municipalities. The processing follows the semi-cooked paste technique characteristic of the denomination, and each wheel retains on its rind the imprints of the basket in which it was pressed—a mark of recognition even more than a decorative feature. The cheese is presented in three stages of maturation: fresh, semi-aged, and aged for over six months, with a profile that becomes progressively sharper and more persistent. Behind this range of aging lies centuries of accumulated pastoral knowledge, which the cooperative doesn't merely preserve as memory but organizes into a collective and verifiable method.
