Calaon Paolo

In Vo', on the Euganean Hills of Padua, Paolo Calaon works volcanic soils and temperate slopes that favor aromatic white wines. The estate's sole denomination, Colli Euganei Fior d'Arancio DOCG, originates from Moscato giallo, complemented by regional varieties, within an area encompassing seventeen municipalities. This producer's character lies in expressing a single denomination in different registers: the still version, the sparkling, and the passito (from dried grapes), each with an alcohol content exceeding 10.5%. It's a range born from a single aromatic grape variety but exploring its possibilities, from dry effervescent to sweet passito. The meticulous vinification respects the denomination's constraints without seeking shortcuts, and it is precisely in this rigor that Calaon's interpretation of the volcanic terroir is recognized. The estate does not receive visitors, but its work remains a good entry point for those who wish to understand how many forms Fior d'Arancio can take.
