Calissano is part of the long history of vermouth in Turin, which began in 1786 when wines flavored with herbs became the aperitif destined to define the city. With an alcohol content of around 18%, this drink quickly conquered the courts and, by the early 20th century, was already an emblem of Italian sophistication recognized throughout Europe. Today, the company, part of Gruppo Italiano Vini, continues that heritage through the single denomination it oversees, the Vermut di Torino IGP. The act is one of synthesis: aromatic botanicals intertwine with the fruit of Piedmontese wines in a recipe that is both pharmacopoeia and culinary delight. More than just a product, it is the continuation of an aperitif culture that spread from the Savoyard capital to other places, and which here, in Alice Bel Colle, finds one of its contemporary voices.
